You could go for cocktail making lessons in The House Hotel, we did that for a while and it was good fun. Otherwise maybe have a spa day or go shopping, or else just go for a boozy lunch!!! What time of year are you thinking of?

What about a boat trip? There is one on the river Corrib, up to Lough Corrib and back and the boat has a bar and food. http://www.corribprincess.ie/

Or maybe a trip to the Aran islands but that would probably take too long.

Or just take it easy, nice (boozy?) lunch in town, wander around the shops, stroll out to Salthill along the prom and eat ice cream on the beach, then back to town for dinner and drinks.

Check if the date you are think of is during any of the festivals, they might provide something to do. But make sure to book accommodation well in advance if there's anything big on.

Also - if considering staying in Jurys Inn - they will tell you all rooms sleep 3 people. What they really mean is there is a double bed plus a sofa bed which is very short, not really suited to anyone much over 5 foot! Though it may have changed since I stayed there a few years ago.
