With regards to the wedding cake, you could find someone who makes coeliac cakes as well as normal ones and get a tier made for you, or you could get a separate cake for yourself and have a normal wedding cake for your guests. To be honest the majority of brides and grooms don't get more than a slice of their own cake (some don't even get that much!) so to order an entire coeliac cake would be costly and unnecessary for the sake of one person out of the whole number.

If your hotel is any good they should be able to provide a coeliac meal for you and regular food for your guests. Or maybe some courses of the meal could be gluten free for everyone. We told our hotel that we have a coeliac and a vegan among the guests and they said absolutely no problem, they will cater for any kind of special diet once they are informed in advance.
For the cake, maybe speak to a cake maker about doing the smallest tier of the cake gluten free and the other tiers normal? I'm sure they must do gluten free alternatives, there are so many wedding where either bride or groom or some of guests are coeliac.

I am a coeliac as well
If the hotel care enough, which I hope they would if you were having Your wedding there it should not be an issue at all. If the chef is aware in advance most dishes can be made gluten-free. Be sure and discuss this with them in advance just to be sure and I'm sure you will have a tasting as well. Some of the weddings I have been to my meal has been much nicer than what others have had but definitely when I'm paying the bill I do not want to be the one with a different meal to eveyone else.
Most hotels these days make soups and sauces gluten and dairy free as standard. So the main would be fine, meat, veg and gravy. Soup course, with gluten free bread, which most places have. The dessert is generally where you get the fruit salad. At the last wedding I was at when they asked if fruit salad was ok, I asked if there was anything else on offer and they gave me a gorgeous mango sorbet!!!!! I definitely do not want to have melon as my starter and dessert at my own wedding!
Not sure as regards the cake. If you do a google search gluten free options will come up and there's a few places in Ireland. You could always put a post on coeliac society website if you're a member. I definitely will have a gluten free cake. I don't like the traditional wedding cake but want to have one so people can taste it and see that gluten free food is not as bad as eveyone imagines. You could also do something a bit different if you wanted....muffins, cupcakes etc Or indeed a tier gluten free as mentioned above. You could always have a go at baking one yourself!!!

As a fellow coeliac I know the feeling. We are also trying to organise our wedding and accommodate my dietary needs along with having a tasty meal for everyone else. The starters and main courses are also easy - just leave out the sauce etc. For desert why not go for mini pavlovas? GF for you and tasty for everyone else (best thing is there's not a fruit salad in sight!!!)
The cake is something I'm struggling with too. I had a local girl that was doing our cake and was doing a GF tier for me, but she has moved now. I know that http://thecakeandcrumb.biz/home make cakes that are supposed to be really tasty, so why not get a small GF cake for you and then just get the normal 3 tier cake for everyone else. Be careful with the places saying they do GF cakes then offering you Chocolate Biscuit cake - they just assume that as they haven't added any flour that the cake is safe for you to eat! Also beware of cross contamination by buying your GF cake off a non specialised GF supplier.
On a completely seperate note, if you haven't tried it yet get some of the new BFree Gluten Free bread that Dunnes are selling. It's the best GF bread I've ever had and you can eat it without toasting it.
