Wedding cake rules

Postby MrsD2be2012 » Tue Aug 09, 2011 10:02 pm

I've just seen in t&cs for a venue that they only accept wedding cakes from supplier with haccp cert and can only accept fruit cake. Has anyone else come across this?

Never heard of it so far and I make cakes. I always ring the hotel a month or two before a wedding and ask them what kind of table or storage they have or if they have any rules, I then deliver the cake the night before the wedding. So far no rules for any cakes.

Ive heard of the HACCAP thing before, its to do with Health and Safety and Hygiene in the kitchen, basically the cake needs to have dockets to say its been made in a clean environment and not going to contaminate the hotel kitchen, just incase they get a health check on the day of your wedding. - but I have never heard about it having to be fruit cake, if the cake has HACCAP documents then it doesnt matter what type of cake it is, no cake is more unheathly than any other cake, maybe except a fresh cream cake due to the short shelf life and special storage considerations for storage.

Best thing to do is check with the hotel to see about the fruit cake thing, as for HACCAP, unless you are going to make the cake yourself or getting a friend to do it, most serious bakers and all bakerys are HACCAP passed so its not all that much of a biggy, just when asking bakers about cakes, double check they are HACCAP passed.

Hope this helps and clears things up a bit!

I can understand the haccap thing there looking after themselves and its probably a good thing it insures everything is up to standards but the fruit cake only thats just unreal :banghead you need to get back onto the hotel and get that sorted and just let them know how you feel and you want that rule taken out.

Yeh the fruit cake only thing is crazy, im having a bit of fruit cake just as I like it and there are other ppl that like it, but it wont be part of the actual cake iykwim - it will be a "cutting" cake in the kitchen, covered in the same icing as the actual cake so no-one is the wiser, fruit cake has to be the bottom layer/tier of a cake as it is so heavy, I like fruit cake but not that much hence having it seperate.

You either like it or you dont and trying ot force ppl to have it is ridiculous!!

I make the odd wedding cake and funny enough have never come across this despite the fact that I think hotels etc should look for HSE approval from any food supplier. There would be difficulty if it was fresh cream or anything that required refrigeration but the average wedding cake is normally fine.

By the way I nearly always do the top tier fruit as most people only want a small tier of fruit, there is no need to have the fruit cake on the bottom. Any type cake can be stacked on top of each other as the weight is actually resting on the dowels used for support and not the cake itself. I have put sponge type cake on bottom, chocolate biscuit on 2nd and fruit on top with no difficulties.

Is having a fruit cake for at least one layer a very typical Irish tradition? (I'm Canadian but my fiancé is Irish and we are getting married in Ireland). I associate fruitcake with Christmas and am getting married in July so I wouldn't have thought of it. :? Thoughts on this???

I suppose the fruit cake used to be a tradition. The idea was that you kept the fruit cake, froze it and then took it out for the first born's christening. You can also give a slice of the cake to a single girl, she's supposed to put it under her pillow while she sleeps and apparently she dreams of the man she is going to marry. Us Irish have some serious old wives tales and supersitions. There's a touch of madness in us all but some more than others!! Fruit cake seems to be dying out for weddings but it's still used every now and again depending on what the bride and groom want.

I've heard of the HACCP thing as well. I was also shocked the first time I heard it.

Are you sure they are saying you have to have a fruit cake or was it that if you are making it yourself or if it's not coming from a bakery that it has to be a fruit cake because they keep for years without going off and probably do not put people in danger of food poisoning.

The hotels are afraid that the cake might poison people and then they'll get the blame, so that's the whole reason for the HACCP thing and maybe have something to do with the fruitcake thing?!

The whole fruit cake stipulation is a bit of an oddity if you ask me.
