I wss just E-mailing my friend (septemberbride) about this topic - I saw it earlier - she is getting married at same hotel and she is bringing a cake in - so I wanted to make sure she knew about it

Anyway she rang the hotel and they said her cake is fine as there is no fresh cream on it - could be the type of cake you are having perhaps?

Agree and also agree with what you said previously scdp. Hotel just wants to cover themselves. Anything that they permit to be consumed on their premises must meet HACCP standards. It's all about food safety and consumer protection - which isn't just about how and where the food is prepared but it's equally with regard to how it's stored, as in what temperature it should be kept at, especially if it's perishable. e.g. as scdp said such as cream etc.
Our cake was in fact done as a dessert cake which contained perishable ingredients (profiteroles encased by a mousse) so needed to be kept in the fridge. All the hotel asked from us was to find out from the people who were making the cake how long it could be left out of the fridge. We found this info out from the cake makers and passed on their instructions to the hotel - they were happy with that.

When I had my mums 60th birthday the restaurant wanted me to provide a cert for my cupcakes but I told them to forget it! I was giving them enough money so unless they're going to get shut down over it then they can do you a favor coz you're giving them enough money, especially in these days!

I have never heard of this before and I used to work in a restaurant and never heard of problem with people taking in their own cakes for communions, confirmations, christenings, weddings, birthdays etc....... Most of the time we kept them in the fridge anyway untill they were needed or needed to be put out, but never had to worry about haccap certs.

@singingbride, that is ridiculous that they were looking for a cert for your own cupcakes!!!!

I think that places are getting a bit silly over the whole health and safety thing, its a bit extreme looking for a cert from people who make cakes as a hobby is ridiculous. If they are beeing picky a little white lie wont hurt!

Hi girls,
I have never heard of this being asked for before, My h2bs sister and my mother is making the cake and our hotel knows it and never said anything. Maybe go back to the hotel and see why they ask for it? If its cause to cover themselves encase ppl get sick and blame them then tell them you will just make the guests aware that the cake was done by whoever. you could say it in the speeches without making an issue out of it. It could be thanking ...... for making out beautiful cake and hope that everyone enjoys it. or something to that effect. I have never heard of anyone getting sick cause of cake (well except for when they ate too much, lol)
