WEDDING CAKE

Hi all,
My problem is my mother has always enjoyed baking and is very good. I really want her to make the wedding cake, but the hotel has advised that it is not possible because i will not be able to provide a HACCP food safety cert. Does anyone else have this prob?

i know a lot of weddings we have been to, there has been lots of home made cakes. It was my first time hearing about it as well.

Iv never heard of this either...I never heard of anyone having to get a HACCAP cert from the bakery either. I know HACCAP is a major thing, I used to work in a deli and it's so important, but with a cake??? Maybe it's because they'll be serving it I'm not sure.

:nope I've never heard of this either. Don't tell the hotel your Mum is definately baking the cake... I am sure they don't ask suppliers of wedding cakes for their cert when they deliver the wedding cake to the hotels. . . how would they know it's your Mum's? A little white lie won't hurt in this regard... :devil2

my aunt (who is making my cake) did tell me before she starts to check with the hotel can the cake be used as she has come across this problem before.

if the hotel arent will to let you bring a cake in, i would try and get it included in your package.

i want the top tier of my cake gluten free because my sister is coeliac, so i was hoping that mam would make the bottom 2 tiers, get the top tier gluten free (professionally done) then get it all iced together.Someone mite be able to give me a cert.

My H2bs cousin is making ours and the hotel did ask who was suppling it but they didnt have an objection when i told them it was a relitive! What does it take to get one of these certs? Is there a soecific place you get them? You could ring whoever supplies the certs and see if its neccessary for a cake???

well my aunt does it from her house, she does this as a hobby. (although she is going into it) so she doesnt have a cert but the hotel didnt have a problem with it.

To get the HACCAP cert you need to do a course and take an exam at the end to get certified. That means then if the premises are ever inspected, you have your certs etc and you have to be following the correct procedures, otherwise you can be done. Bascially it's like any health inspection. Anywhere that supplies food has to have at least 1 HACCAP certified person the premises....well that's the way it was when I was a food shop manager! We had a few people who were fully certified. Not sure what way it works though in relation to bringing a cert to the hotel. Maybe they mean that the person that makes it is supposed to be certified?

I think it seems mad when it is all your guests eating it and the cake it not for sale.

oh that could have been the exam my aunt was doing so. so maybe she does have it so, but the hotel never asked for it.

diamond it could be if your guests get sick they could blame the food and then there could be case. (not saying that if your mom made it it would make people sick but they couldnt take the chance)

Thing is tho Diamond, god forbid if something happened and people got sick what happens then?? I dont think I have ever heard of anyone getting sick from a cake but I guess maybe the hotel are just trying to cover themselves? Maybe tell them you bought the cake in M&S! Sure how are they to know
